Cashew Butter Banana Bread (With No Added Sugar)


It’s safe to say I love banana bread. It’s one of my favorites. Recently, I started teaching a 5-week sugar detox/whole-food reset program (more here) and I wanted to make a version of banana bread without any added sugar.

So, this is where this recipe came in: banana bread with no added sugar, cashew butter and 100% dark chocolate. You won’t miss the added sugar, trust me!

Feel free to make these into muffins too. Store the loaf (or muffins) in the fridge or freezer (for later use).

Cashew Butter Banana Bread (With No Added Sugar)

Makes 1 loaf or 12 muffins

Cook time: 30 minutes

Ingredients:⁣

1 cup almond flour

2 tbs coconut flour or more almond flour

1 tsp baking soda ⁣

1/2 tbs cinnamon (I like Frontier Co-Op) ⁣

1/4 tsp Sea Salt ⁣

3-4 green-tip bananas, mashed (makes 1 cup)⁣

4 eggs⁣

1/4 cup coconut oil, melted ⁣

1 tbs cashew butter

1/2 cup chopped 100% dark chocolate ⁣



Directions:⁣
⁣Preheat oven to 350° F.⁣

Line a loaf pan with parchment and place aside.⁣

In a medium-sized bowl, mix the dry ingredients together.⁣

In a small bowl, whisk together the banana, eggs, cashew butter, and coconut oil. Add the wet ingredients to the dry and stir till combined. Fold in the broken chocolate bar pieces.⁣ Scoop batter into each lined loaf pan until about 3/4 full. ⁣

Cook for ~ 30 minutes until top is golden brown and a toothpick comes out clean. ⁣

Let the loaf rest for 10 minutes until removing.
